The salmon remains mild and well-rounded, as is fitting for a light fillet, and the cream captures its sweetness. The anise note of tarragon—an herb that has belonged with fish and eggs in France for centuries—rests gently on top.

The smoked, sautéed onions provide a dark note that one would sooner expect from a stovetop than a tin. They give the cream depth without the smoke taking center stage, and keep the tarragon from dominating.

The lemon juice keeps the texture bright and fresh, while chicory root fibers provide a soft, creamy consistency. This ensures the spread remains spreadable, even when taken directly from the refrigerator.

On blinis, with eggs, in a quiche

Served on a warm blini with a spoonful of crème fraîche, this cream is perfect for an aperitif, and the plate needs nothing more. It works just as well on toasted baguette, where the roasted aroma carries the onion note further.
