Questions about Sardines for Frying – Lemon Coriander?

We are happy to help you with la belle-iloise.

Sardines for Frying Lemon Coriander by la belle-iloise

Sardines for Frying Lemon Coriander by la belle-iloise are meant to be served warm: preserved lemon, fennel, ginger, and coriander leaves are packed in the tin along with the fish. Only in the frying pan do these aromas fully unfold, filling half the kitchen with their fragrance.

Sardines for Frying Lemon Coriander are a canned fish specialty from la belle-iloise in Quiberon, Brittany. The sardines cuisinées are nestled in a lightly thickened sauce of olive oil, fennel, and salt-preserved lemon, seasoned with ginger and fresh coriander.

Salty fruit, anise from the fennel, warmth from the ginger

The preserved fruit provides a dense, mellow fruitiness that has nothing in common with a splash of juice, as the bitterness of the peel disappears during the curing process. Underlying this, the fennel adds its anise note, while the ginger provides a lingering, dry warmth.

The fresh coriander comes last, adding a bright, herbaceous touch that is entirely different from the earthy seeds of the same plant. Potato starch thickens the juices just enough to coat the fish and create a light sauce on the plate.

The Sardines for Frying Orient from the same producer reach deeper into the spice cabinet and maintain a darker profile. This version, however, is led by bright citrus notes, which is why the tin is more reminiscent of a Mediterranean market than a harbor kitchen in the north.

Sardines with couscous, on baguette, or in a lukewarm salad

Briefly place the unopened tin in warm water, then open it and empty the contents into a pan over low heat. Too much heat will break up the fillets and dissipate the delicate aromas from the sauce.

This recipe is best enjoyed with fragrant rice or couscous, which absorbs the sauce completely; add a few fresh coriander leaves on top. Served on toasted baguette, it becomes the house's fastest warm appetizer, and in a lukewarm salad with raw fennel, it brings the flavors full circle.

On gray days, this preserve shows its bright side when a simple meal needs a little color. At la belle-iloise, it is one of the few recipes that requires the stove—and rewards it. A glass of chilled, acidic white wine stands up well to the saltiness of the lemon.

Citron confit, ripened in salt for weeks

To make preserved lemons, whole fruits are sliced, stuffed with coarse salt, and left in their own juice to soften over several weeks. The hard peel becomes the true delicacy, while the fruit flesh takes a backseat.

This technique originates in North Africa and is a staple of Moroccan cuisine, where preserved lemon is served with tagines and poultry. The fact that it ends up in a sardine tin in Quiberon says a lot about la belle-iloise’s ambition to constantly send their sardines on new culinary journeys. The fish itself is caught in season off the Breton coast and packed into the tins by hand.

The tin for a quick warm dinner

Unopened, it keeps for years in the pantry, making it the perfect staple for an evening when you want something warm but quick. It is plenty for two servings with rice; for four guests, plan on three to four tins. Other Sardines for Frying are available nearby, and you can find the entire la belle-iloise range in our selection from Quiberon.
