Sardines in oil with lemon from la belle-iloise are packed in extra virgin olive oil, with lemon added as whole fruit slices rather than juice. Its acidity keeps the rich fish bright and makes it the most tranquil classic from Quiberon.

Sardines in oil with lemon are the classic canned fish from la belle-iloise in Quiberon, Brittany. There are four ingredients on the label, and inside the flat tin, the Sardines Citron rest in oil, skin and bone intact, bedded on lemon and a touch of salt.

Lemon makes the sardine bright

The first impression is oil, the second is lemon, and only then comes the rich, dark meat of the fish itself. The fruit provides acidity, and with fatty fish, acidity is the perfect counterpoint that makes it feel light.

The extra virgin olive oil coats every fillet and keeps it moist, while the salt merely sets the stage. Upon opening, it smells of the sea and lemon zest, a scent more reminiscent of a harbor market than a canned product.

Because the fruit itself is placed in the oil, the acidity remains rounder than it would with a mere splash of juice. It slowly permeates the flesh over several weeks, making it more tender over time.

Sardines Citron on an appetizer platter

Butter, radishes, a sliced baguette, and this tin create a French appetizer for two in five minutes. The recipe requires no more effort, and it hardly needs any more ingredients.

In a Salade Niçoise with green beans, egg, and olives, it takes the place of tuna, bringing both oil and acid along with it. It tastes freshest cold from the fridge; at room temperature, however, the olive oil stands out more clearly. Try both back-to-back on a hot day—the difference is greater than the simple label would suggest.

A fish made great by the cannery

The sardine is a schooling fish caught off the Breton coast during the warmer months, staying fresh for only a few hours. This is precisely why an entire canning industry emerged along this coast, and Quiberon was one of its ports.

At la belle-iloise, the fish arrive in season and are placed by hand into the tins on the very day they are caught, head to tail, as the narrow frame requires. The oil follows, and the tin is sealed only after the lemon is in its place. The tin then goes into the autoclave.

There, the contents cook slowly in their own juices, which makes the bones soft enough to eat. If you would still prefer not to have them on your plate, la belle-iloise offers boneless sardines with lemon using the same recipe.

A tin waiting in the cupboard for its day

Unopened, the tin lasts for years in a dark kitchen cupboard, and in summer, it is the dinner for which no one needs to turn on the stove. Store it lying down and in a cool place so the oil distributes evenly over the fillets. Once opened, store any leftovers covered in the refrigerator and eat them the next day.
