Sardine cream with 2 olives from la belle-iloise, savory and spreadable

Sardine cream with 2 olives from la belle-iloise is a fish spread made from sardine meat, extra virgin olive oil, and two types of olives. The green and black fruits come from the same tree, harvested at two different times.

Sardine cream with 2 olives is a spreadable fish pâté from la belle-iloise in Quiberon, Brittany. The small 60-gram tin of "Sardinade aux deux Olives" contains a cream made of sardine meat, extra virgin olive oil, green and black olives, onions, garlic, and egg yolk.

Salty, fruity, with a dark foundation

The green olive adds a bite and a herbaceous bitterness that hits the palate first and keeps the cream vibrant. It is the part you taste initially and the one that lingers longest in your memory.

The black olive, by contrast, works in the background—softer and rounder, with an oily sweetness that rounds off the finish. Between the two lies the sardine meat, salty and robust, with the garlic drawing a narrow, sharp line through it.

Egg yolk and a little potato starch bind the mixture into a texture that stays on the knife and spreads cleanly. It remains spreadable even straight out of the refrigerator, yet does not melt on warm bread.

On baguette, in tomatoes, for the aperitif

Served on a piece of fresh baguette with a glass of cold white wine, this tin makes a complete aperitif for two. Nothing else is needed on the table.

Stuffed into hollowed-out cherry tomatoes, it becomes a snack for guests that looks like much more work than it actually is. It also works well rolled into warm puff pastry and briefly baked.

If you prefer spirits in your spread rather than olives, you will find it in the lobster mousse with cognac, which is finer and significantly milder.

One tree, two harvest times

Green and black olives are not two different varieties, but the same fruit at two stages of ripeness. The entire difference arises solely from the day on which they are harvested.

Those who harvest early get firm green olives with their distinct bitterness and comparatively little oil in the flesh. Those who wait until the fruit turns dark on the tree harvest black ones, which are softer, taste sweeter, and contain significantly more oil.

Together in a cream, they provide two layers that one variety alone could never deliver. The name of the tin is therefore not a marketing term, but a simple description of the recipe.

Before being mixed, both varieties are pitted and roughly chopped so that the cream does not become uniformly gray, but retains its light and dark flecks. This leaves visible pieces of olive in the sardine meat that you can see as you spread it.

The small tin for an evening for two

Once opened, the spread will keep covered in the refrigerator for one to two days; unopened, the tin can sit in the cupboard for years. Because whole fruits are processed, occasional fragments of pits may remain, which is part of the nature of real olives. Further fish spreads and creams can be found alongside, and you can find the full range in the selection from Quiberon.
