Sardines with kumquat & green pepper are a fruitily seasoned canned fish from la belle-iloise in Quiberon, Brittany. Whole sardines are packed in grape seed oil, joined by pieces of kumquat, lemon juice, and whole grains of green pepper, which are milder than black ones.

Sweet peel, sour flesh, green pepper

The kumquat reverses the usual order, as with this fruit, the peel is the sweet part and the inside is the sour part. This is precisely why this recipe tastes bright and fruity at first, and only then lemony and sharp.

The green pepper adds round, soft grains in between, which release a herbaceous heat when crushed. It tingles briefly and then disappears instead of lingering, leaving enough room for the fish.

For this recipe, la belle-iloise uses grape seed oil, which remains in the background because it has almost no flavor of its own and tends to carry rather than color the aromas. This keeps the citrus note of the fruit clearly recognizable, and the sardine retains its own strong character.

On toast, in a rocket salad, alongside short pasta

On a slice of toasted bread, with nothing else, the kumquat comes through most clearly, and the dry bread soaks up the oil. Add a few arugula leaves, and the appetizer becomes a small plate.

With a glass of dry white wine from the Loire, this recipe belongs to a late afternoon outdoors. A dry cider from Brittany also stands up to the sweetness without overpowering it.

In a salad, the bitterness of the arugula meets the sweetness of the peel, a contrast that does not require any additional dressing. For short pasta with a little olive oil and parsley, half a tin is enough for two portions. Open it half an hour before eating, then the fruit will stand out more clearly than directly from the cold.

Two ingredients that come from far away

The kumquat originally comes from South China and is eaten whole because its thin peel carries most of the aroma. It has long been grown on the coast of the Mediterranean, and from there its path leads to the workshop in Quiberon.

The green pepper is harvested unripe and preserved immediately before it can darken and become hotter. That is why it tastes vegetal and fresh, almost like a green pod, whereas the same berry fully ripened becomes a hot black peppercorn.

At la belle-iloise, both meet a fish that is caught off the Breton coast in season. A little potato starch binds the juices in the tin so that the seasoning stays on the fish. If you prefer the pepper solo, you will find it in the Sardines in oil with green pepper.

Unopened, it will last for years in a dark cupboard, waiting for the evening when you want something unusual on the table. One tin is enough for two appetizers; for a group of four, it is better to set out two.
