Sardines with spices by la belle-iloise are whole fish from Quiberon in extra virgin olive oil, seasoned with laurel, clove, and white pepper. They also include a small red chili pepper, known in France as Piment Langue d'Oiseau, or "bird's tongue" chili.

Sardines with Spices are a canned fish product from la belle-iloise in Quiberon, Brittany, labeled as "Sardines aux épices et aux aromates." The flat tin contains whole sardines in oil, interspersed with a bay leaf, carrot slices, and a piece of gherkin.

Clove, laurel, and a subtle heat

The clove adds a warm, almost wintery sweetness to the fish, which is contrasted by the tart herbal note of the laurel. The white pepper is added to the blend as a ripe, peeled berry, making it milder than black pepper. The bird’s tongue chili is named for its slender shape and provides a clear, clean heat that dissipates quickly.

Carrot slices and a piece of gherkin are included in the marinade; their acidity breaks up the heavy oil and keeps the flavor profile lively. The extra virgin olive oil absorbs the aromas over several weeks and releases them back into the whole fish, including the skin and bones, when the tin is opened.

On rustic bread, alongside aged hard cheese

On a slice of toasted rustic bread, this recipe needs nothing more, as the clove and laurel already provide sufficient seasoning. Alongside an aged hard cheese, it holds its own and stands on equal footing rather than disappearing under the acidity of the cheese.

A dry cider from Brittany is the obvious pairing; on cooler evenings, a robust red wine also works well. Mashed with a little lemon and parsley, it becomes a flavorful appetizer cream in just five minutes. Take the tin out of the refrigerator half an hour before serving so the oil liquefies and the spices can open up.

What months in a dark cupboard can do

Oil-packed sardines are among the few canned goods that actually improve with time, as the oil slowly continues to carry the spices. In France, a specific habit has become common: turning the tin every few months to ensure each fish is equally coated in the oil.

The meat becomes softer and absorbs more of the spices, a process that can continue for years. This robust blend is specifically designed for aging, whereas more delicately seasoned recipes from la belle-iloise are better enjoyed sooner.

The sardines are caught in season off the coast of Brittany and are cleaned, salted, and placed in the tins by hand within a single day. Only afterwards are the oil and spices added, with each layer placed individually to ensure the bay leaf sits exactly where it should. la belle-iloise maintains this level of handcraft to this day, which is why every tin you open has its own unique arrangement.

One tin is enough for two portions as an appetizer with bread, and if you want to test the difference, tuck a second one away in your cupboard. Note the date of purchase on the lid, or you might forget the vintage after moving the tin around in your pantry a few times.
