Sardines with Olive Oil and Tomato from la belle-iloise

Sardines with olive oil and tomato from la belle-iloise are whole fish in a reduced tomato sauce, to which extra virgin olive oil adds a savory edge. The oil makes all the difference compared to its milder sister version with sunflower oil.

Sardines with olive oil and tomato are a classic canned fish product from la belle-iloise in Quiberon, Brittany. In the flat 115-gram tin of Sardines à la Tomate et Huile d'olive, whole sardines are packed in a seasoned tomato sauce, accompanied by extra virgin olive oil, herbs, spirit vinegar, and salt.

Two fruits on one fish

Botanically speaking, both tomato and olive are fruits, and both contribute sweetness and acidity, albeit in very different forms and intensities. In this tin, they meet and reinforce each other rather than getting in each other's way.

The tomato takes center stage, fruity and rounded, with an acidity that is further strengthened by the spirit vinegar. The olive oil sits underneath, giving the sauce a green, slightly peppery note that only becomes apparent in the aftertaste.

This is precisely where the two tomato sardines from the producer diverge. While the sardines in tomato sauce use sunflower oil and intentionally remain neutral, the olive oil here makes its presence felt, resulting in a bolder and deeper-toned sauce.

On bread, over pasta, alongside eggs

On a slice of sourdough bread, served cold straight from the tin, this sardine is the quickest dinner a kitchen can provide. The sauce soaks into the crumb, and the plate needs nothing more.

Stirred into short pasta with a spoonful of pasta water, one tin creates a complete sauce for two portions. Alongside a hard-boiled egg and a few black olives, it makes for a meal like the ones that have been served for lunch on the French coast for generations.

If you prefer them warm, heat them in a pot briefly over a low flame so the fillets remain whole and do not fall apart.

How the oil gets into the sauce

Olive oil and tomato sauce naturally separate if you simply pour them together and let them sit, as oil is lighter than water and floats to the top. In a sealed tin, however, something else happens.

Fish, sauce, and oil are filled together; the tin is sealed and only then heated while in its closed container. Under pressure and heat, the sauce and oil combine into a dense consistency that does not separate again, even after months on the shelf.

The same heat makes the bones so soft that you eat them without even noticing, and it is the reason why a canned product remains shelf-stable for years without refrigeration.

The tin for the empty fridge

It sits in the pantry for years, ready for those evenings when there is nothing fresh in the house and no one feels like going shopping. Once opened, store any leftovers in a jar and eat them cold on bread the next day. You will find other canned fish nearby, and you can browse the full range from Brittany in our la belle-iloise selection.
