Sardines with Muscadet by la belle-iloise are served in a clear marinade of dry white wine, vinegar, and vegetables, with absolutely no added oil. Lemon, carrot, and gherkin provide the seasoning, and the wine from the Loire Valley gives the recipe its name.

Sardines with Muscadet are an oil-free canned fish product from la belle-iloise in Quiberon, Brittany, labeled as Sardines marinées au muscadet et aromates. In the flat tin, whole sardines are packed in a broth of wine, spirit vinegar, lemon, carrot, and gherkin.

Fresh, salty, and without a drop of oil

Without oil, the initial impression is much clearer: first comes the acidity, then the salt, and only then does the fish reveal itself with its own natural fat.

The white wine contributes a subtle tartness, the lemon brightens it up, and the carrot adds a soft touch of sweetness underneath. The gherkin provides a salty crunch, reminding us that a marinade can have texture too.

Because no oil carries the flavor, everything is laid bare, and the fish must stand on its own merits. Only a well-processed catch can endure this without seeming thin. Alcohol is therefore listed on the label, as the white wine is not cooked off; it remains in the tin as the marinade.

The cold canned fish for potato salad

Served well-chilled from the refrigerator, the freshness comes through best, and you need nothing more than a fork to enjoy them.

For a simple potato salad with chives, the broth acts as part of the dressing, so only a little oil and some mustard are needed. Over young leaf salads with radishes, the recipe works as a complete lunch on hot days.

On a slice of baguette with salted butter, two Breton staples meet, and a glass of the same dry white wine makes the perfect pairing. Only open the tin shortly before eating so that none of the acidity escapes.

Melon de Bourgogne, the grape behind the name

Muscadet designates a wine-growing region around Nantes, and the grape grown there bears an entirely different name: Melon de Bourgogne.

It produces a bright, tart wine with little fruit and significant salinity, which has long been enjoyed with oysters and everything else that comes from the Atlantic. The best barrels are left on the lees over the winter, sur lie as they say there, gaining depth in the process.

No other drink is as closely linked to the fish of this coast, which is precisely why it is in the marinade rather than just in the glass alongside it. At la belle-iloise, it is the ingredient that gives the recipe its name.

This wine travels from the Loire estuary to Quiberon, where it meets the fish in the marinade with which it belongs in the glass anyway. At la belle-iloise, this recipe is one of the few that does without fat.

The sardines are caught in season off the Breton coast and are cleaned and salted by hand on the day of the catch before the broth is added.

A light pantry staple for hot days

Unopened, the tin will keep for years in the cupboard; once opened, keep the remainder covered in the fridge and eat it the next day. It is enough as a starter for two people when served with bread; for a summer buffet, plan on two tins.
