What the tomato does for the fish

The sauce is fruity and mild, with a slight acidity from the vinegar that cuts through the richness of the oily fish. It coats every fillet without overpowering it, and remains thin enough to be mopped up with bread.

The sunflower oil is the silent ingredient here: it contributes almost no flavor of its own and leaves all the room for the tomato. This is precisely the difference compared to sardines in oil, where the olive oil itself plays a role and introduces a second fruit-like note.

Canned fish with couscous and pasta

Therefore, the fruit is cooked down for a long time until the water is gone and the sugars, acidity, and color are densely concentrated. This concentrate forms the red broth, which is then cooked together with the fillets in an autoclave.

For la belle-iloise, the sardines arrive in season off the Breton coast and are cleaned and packed by hand on the very day they are caught. At la belle-iloise, this recipe is one of their most understated, and it has outlasted every passing trend.

Tomatoes only arrived in Breton canned goods in the nineteenth century, when people on the coast were looking for a recipe that didn't require expensive olive oil. This bit of thriftiness turned into a classic in its own right, one that can be found in almost every French pantry to this day.
