Sardines for Frying with Tomato and Pistou are a warm tinned fish product from la belle-iloise in Quiberon, Brittany, labeled as "Sardines cuisinées à déguster chaud à la tomate et au pistou." The tin contains whole sardines in a sauce made from tomato paste, bell pepper, onions, garlic, basil, and extra virgin olive oil.

Basil and garlic over a red base

The sauce tastes both fruity and herbal: tomato paste and red bell pepper provide color and sweetness, the garlic stands out in contrast, and the basil settles over it as a bright note.

The extra virgin olive oil binds the flavors together and releases them toward the fish when heated. A little vinegar keeps the sweetness of the tomato in check so that the recipe does not become too mild.

The herb is present in smaller quantities than the tomato or bell pepper, but it defines the flavor much more strongly because its aroma is both volatile and penetrating. This is precisely why the sauce is only warmed and not cooked.

The sardine remains recognizable underneath, because its firm meat holds its own against the garlic and tomato. A milder fish would have been lost under this seasoning.

The warm tinned fish with pasta and toasted bread

Place the unopened tin in hot water briefly so the contents release in one piece and the fillets remain whole.

In the pan, two to three minutes over a low flame is enough; more heat will cost the basil its fragrance. Poured over short pasta, the sauce is a finished dressing and main dish in one.

Pistou, crushed in a mortar

Pistou is the Provençal sauce made from garlic, basil, and olive oil, and its name comes from the Occitan word for "crushed," as it is done in a mortar.

The same word appears in the Italian "pesto," but pistou is made without pine nuts and relies solely on the herb, garlic, and oil. In the south of France, it is traditionally stirred into vegetable soup only at the end, which is how the soup gets its name, "soupe au pistou."

It is a long way from Provence to Quiberon, and that is exactly what makes the recipe so appealing: an herb from the sun combined with a fish from the cold Atlantic. At la belle-iloise, the fish is caught in season and cleaned and packed by hand on the day of the catch.

The sauce is added only afterwards, and it infuses the meat over several weeks inside the sealed container.
