Pitomail sardines from la belle-iloise are served in a red spiced sauce made from tomato paste, mild chili, and a distinct note of garlic. The name combines three French words into one: piment (chili), tomate (tomato), and ail, as garlic is called south of the Loire.

Pitomail sardines are a canned fish product from la belle-iloise in Quiberon, Brittany. The fish is preserved in a mixture of peanut oil and extra virgin olive oil, supplemented by tomato paste, a touch of vinegar, and a mild chili that adds warmth to the recipe without making it hot.

Red paste up front, garlic behind it, warmth at the end

The tomato paste sets the tone, concentrated and slightly sweet, as it is cooked down before entering the can rather than being fresh pulp. Underneath lies the garlic note, which gives the dish its savory character and distinguishes it from a simple red sardine.

The chili only makes its presence known at the end, providing warmth rather than heat. The vinegar adds a bright counterpoint so that the sweetness does not overpower the fish, while the guar gum keeps the seasoning on the fillet instead of letting it settle at the bottom.

The sardines in tomato sauce from the same producer take a more direct approach, letting the red fruit shine alone. Pitomail takes the same starting point and builds garlic and chili on top of it, which is why this tin offers significantly more spice and stands up well to a hearty rustic bread.

Sardines on baguette, with pasta, or over rice salad

On toasted baguette, this recipe needs no further seasoning because the dressing is already included. A few leaves of parsley are enough, if anything at all, and a smear of cold butter underneath turns it into a light meal.

For a simple pasta dish, crush the contents with a fork and stir them into the hot noodles, allowing the seasoning to coat everything in one go. Over a rice salad with bell peppers and spring onions, the same red oil acts as a ready-made marinade, and a squeeze of lemon ties everything together.

Served cold from the fridge, the sharpest side comes out, as the coolness highlights the chili and vinegar. At room temperature, the fruity notes move to the forefront; both have their place on a long summer evening. Take the tin out in advance if you prefer the milder profile.

Two oils in a single tin

What is unusual about this la belle-iloise recipe is the combination of two oils. Peanut oil, which has been the standard for the frying pan in France for generations, is neutral in flavor and lets the spices take center stage, which is why peanuts appear early in the ingredient list.

The extra virgin olive oil follows, bringing the fruitiness that one expects from a Breton sardine. At la belle-iloise, the fish is caught in season and packed by hand before the red sauce is added and the lid is sealed. Only then is the sealed tin heated, allowing the fish and seasoning to cook together and exchange their aromas.

A pantry classic

Unopened, the tin will last for years in the cupboard, ready for when nothing is prepared for dinner. It works well as an appetizer for two with some bread; for an impromptu barbecue for four, plan on using two to three tins.
