The flat tin contains whole sardines in extra virgin olive oil, along with lemon juice, finely chopped lemon thyme, and that Timut pepper, which keeps the spiciness light and bright.

A tinned fish that smells of citrus zest

Upon opening, the bright herbal notes of the lemon thyme rise up first. The herb carries its lemon oil in its small leaves and lies finely chopped between the fish and the olive oil.

Then comes the tingling of the Timut, a spice that dances briefly on the tongue before transitioning into a note of ripe grapefruit. The extra virgin olive oil binds both together, taking the edge off the sardine without overpowering its robust oceanic note. The lemon juice keeps the recipe lean, so every bite starts fresh and ends with a zing.

Salt is added sparingly, as the seasoning is meant to come from the herb and the berry. Two spices and a good oil—this tin from la belle-iloise contains nothing more.

On toasted sourdough bread and in fennel salad

This recipe is perfectly at home on a slice of toasted sourdough bread with a few flakes of fleur de sel. The hearty bread absorbs the seasoning, yet the Timut still remains at the forefront.

In a salad of raw fennel and radishes, the citrus note meets anise and spice—a combination that requires no additional dressing. When served with seared poultry, the fish takes a step back, acting more as a seasoning than a main course. Take the tin out of the refrigerator half an hour before eating so that the aroma of the oil can unfold.

For lukewarm potatoes, mash the sardines roughly with a fork and pour the oil directly over them. The citrus aroma also works well over a plate of short pasta; a single parsley leaf is all you need as an ingredient. A glass of cool Muscadet from the neighboring Loire Valley suits this recipe better than any heavy white wine.

A pepper from Nepal that isn't really a pepper

Timut grows in the mountain valleys of Nepal on thorny bushes and is harvested as an unripe berry. When dried, it bursts open; it is primarily the crunchy shell that is used, not the seed inside.

Botanically, Timut is closely related to Szechuan pepper and belongs to the rue family, making it a relative of the lemon and grapefruit. This explains its citrus note, and it also explains why la belle-iloise pairs it with two related flavors: lemon thyme and lemon juice.

In Quiberon, this exotic berry meets fish that is caught off the coast of Brittany during the season and processed on the same day it is caught. Guar gum, derived from the seeds of a legume, binds the small amount of liquid in the tin. This ensures the seasoning stays on the fillets rather than settling at the bottom.

A little stash for a long summer evening
