Sardines à la Luzienne are a spiced canned fish product from la belle-iloise in Quiberon, Brittany. The flat tin contains whole sardines in olive oil, accompanied by red bell pepper, tomato concentrate, onions, red wine vinegar, garlic, oregano, air-dried ham, and mild chili from the Basque Country.

Bell pepper, oregano, and a warming heat

The red wine vinegar gives the marinade its acidity, the bell pepper its sweetness, and the oregano adds its dry herbal notes to the fish. This creates a profile more reminiscent of the Bay of Biscay than of Brittany.

The air-dried ham from the Southwest contributes salt and a subtle note of smoke—a little goes a long way. At la belle-iloise, it is added in small cubes between the fish so it distributes over the weeks. Garlic remains discreetly in the background, pushing the other ingredients forward rather than standing out itself.

The sardine is served whole, with skin and bones, and holds its own against the robust marinade. This is exactly what distinguishes it from the flaked Émietté de Thon Luzienne, which features the same seasoning on tuna.

Country bread, grilled vegetables, and a glass of red

On toasted country bread with nothing else on top, this recipe from la belle-iloise shows what it can do, as it brings its own salt and spice.

Served alongside grilled bell peppers or oven-roasted zucchini, it makes for a summery dish where the marinade doubles as the dressing. A robust glass of red wine suits it better than any light white wine, or perhaps a dry cider on cool evenings.

Mash the fillets with a fork, add a splash of olive oil and lemon, and you have a dip for an aperitif in five minutes. Take it out of the fridge half an hour beforehand to let the flavors open up.

Ham from the Adour Valley

Bayonne is located where the Adour river flows into the sea, and the ham from this region is rubbed with salt from Salies-de-Béarn, an ancient brine spring further inland.

It is then aged for months in the humid Atlantic air, becoming soft and nutty while losing its salt-sharpness. This maturity is why a small amount is sufficient to give a whole marinade its direction.

The recipe's name refers to Saint-Jean-de-Luz, the Basque port just before the Spanish border, where la belle-iloise operates its own boutique. The culinary inspiration comes from there, the fish from Quiberon, and the two meet in the flat tin.

The fish is caught in season off the Breton coast and cleaned and salted by hand that same day, before the oil and spices are added. This short interval between the net and the tin is why the flesh remains firm and does not fall apart during cooking.

The robust marinade then needs time, as it slowly penetrates the fish over months, becoming more rounded in the process. A tin that has been aged for a while tastes more cohesive than a freshly filled one.

The pantry staple for a Basque aperitif

Unopened, the tin can sit in the cupboard for years, turning an improvised evening into something with character. It is enough for two people as an appetizer with bread; for a larger group, it is best to have two on hand.
