Questions about Sardines with Tapenade?

We are happy to help you with la belle-iloise.

Sardines with Tapenade by la belle-iloise, savory and dark

Sardines with Tapenade by la belle-iloise are nestled under a paste of black olives, garlic, herbs, and salted anchovies. Tapenade is the quintessential savory spread of Provence, and here it meets a fish that hails from the cool Atlantic off the Breton coast.

Sardines with Tapenade are a tinned fish product from la belle-iloise in Quiberon, Brittany. The fillets are topped with a dark paste that accounts for a good quarter of the contents, accompanied by extra virgin olive oil and salt.

Earthy depth, garlic, and a second source of salt

The puréed black olives provide an earthy base note, bold and slightly bitter, characteristic of fully ripened fruit. Garlic and herbs de Provence form the Mediterranean framework without either element overpowering the other.

The real surprise lies in the salted anchovies within. Anchovies do not just taste of themselves; they enhance everything else, just as these small salty fish have done in southern French cuisine for generations, and they also provide a significant portion of the seasoning.

The sardine underneath remains tender and oily, holding its own against the dark mass. Those who prefer the fruit whole will find them in our Sardines with Nice Olives, where they are included in the tin with pits intact, making every bite unique.

Sardines on buttered bread, on a tart, or with cream cheese

This recipe finds its simplest home on buttered country bread, as the cool butter balances the salt and rounds out the texture. The slice needs nothing more—perhaps just a few leaves of arugula for a bitter counterpoint.

As a topping for a quick tart, layered with a few tomato slices and a bit of goat cheese, it can be baked in the oven for twenty minutes to serve as a warm appetizer. Mixed with cream cheese, it creates an instant spread for an aperitif, which is best chilled before guests arrive.

For new potatoes, rice, or short pasta, simply crush everything coarsely and add the oil from the tin. A glass of dry rosé pairs better with this seasoning than any white wine, and a cold cider from Brittany works just as well.

Twice the fish in one recipe

In Provence, tapenade is a spread for everything—bread, lamb, hard-boiled eggs—and almost every version includes a bit of anchovy. The small salt-cured fish plays a role there that bouillon or aged cheese plays elsewhere, and that is precisely the foundation for the depth of this tinned product from la belle-iloise.

In Quiberon, this southern preparation meets a fish that is caught in season off the coast and packed by hand. Two seas come together in the same tin: one as the main product, the other as the seasoning. Only then does the sealed tin undergo heat treatment, allowing the paste and fillet to marinate together and exchange their aromas.

The south for your pantry

Unopened, the tin will keep for years in the cupboard, ready for whenever a spontaneous aperitif arises. As with all la belle-iloise recipes, be sure to include the oil on the plate rather than pouring it down the drain. It is more than enough for two as an appetizer when served with a little bread. Other tinned seafood can be found on the shelf nearby, and our full range from la belle-iloise can be found in our Quiberon selection.
