Sardines with chili by la belle-iloise, red and green

Sardines with chili by la belle-iloise are whole fish from Quiberon in extra virgin olive oil, spiced with red and green chili peppers. Lemon is added as fruit, keeping the heat bright instead of letting it become scorching.

Sardines with chili are a spicy canned fish product from la belle-iloise in Quiberon, Brittany. Inside the flat tin are whole sardines in oil, interspersed with red and green peppers, lemon, a little salt, and a dash of spirit vinegar to bind the marinade together.

Two peppers and a lemon over the fish

The green pepper brings a grassy, almost herbaceous heat, while the red one offers a riper, rounder flavor because it remained on the vine longer. Together, they create a seasoning that doesn't focus on one point, but spreads across every bite.

The lemon provides a counterpoint of acidity, making the robust fish brighter than the oil would leave it on its own. A touch of potato starch thickens the liquid in the tin so that the seasoning stays on the fillets instead of pooling at the bottom.

The sardine itself easily stands up to this seasoning, as its dark meat is inherently rich and takes well to both salt and chili. A milder fish would have vanished beneath two peppers, but here, it remains recognizable until the final bite.

Black bread, radish salad, and a cold beer

This recipe is perfectly at home on a slice of hearty black bread, as the firm crumb holds up to the heat without diminishing it.

Over a salad of radishes and young greens, you can roughly mash the fillets with a fork and pour the oil directly over them as a dressing. Paired with a cold beer after work, you only need bread, and dinner is ready before the foam has settled.

A mild fresh goat cheese on toasted baguette captures the heat and provides a cool contrast. Take the tin out of the refrigerator half an hour before eating so the oil turns liquid again and the chili notes open up.

Why one pepper turns red and the other stays green

For a chili, green and red represent two stages of the same fruit: every pepper starts green and only gradually changes color on the vine. Harvesting is therefore done twice—early for herbaceous freshness and late for ripe sweetness.

The heat-inducing compound is not in the skin, but in the pale internal membranes to which the seeds are attached. The oil absorbs this substance over the weeks and distributes it evenly to every fish, until even the bones take on some of the flavor.

At la belle-iloise, the sardines come in from the Breton coast during the season and are cleaned by hand and placed in the tins on the day they are caught. Only then are the oil, lemon, and the two peppers added, one layer at a time.

Because the heat is fat-soluble, it migrates from the peppers into the olive oil and from there into the fish in the weeks after sealing. That is why a tin that has been in the pantry for half a year tastes rounder than one that was freshly packed.

A quick pantry staple for a spicy evening

Unopened, the la belle-iloise tin keeps for years in a dark cupboard, ready for when someone drops by unexpectedly in the evening. Once opened, cover the remainder and keep it refrigerated to finish the next day—ideally with the oil, as that is where all the seasoning resides. Other spicy sardines can be found alongside it, and the rest of the assortment from Quiberon is available in the la belle-iloise collection.
