Boneless Sardines with Tomato by la belle-iloise

Boneless sardines with tomato by la belle-iloise are hand-boned fillets in a sauce made from reduced tomato and extra virgin olive oil. With no spine or lateral bones, they can be divided with a fork just like a pan-fried fillet.

Boneless sardines with tomato are the deboned canned fish specialty from la belle-iloise in Quiberon, Brittany. In the 115-gram Sardines sans arêtes et à la Tomate tin, sardine fillets are submerged in a sauce of tomato concentrate, supplemented by extra virgin olive oil, herbs, a little vinegar, and salt.

Soft fillet in red sauce

Without bones, the same sardine tastes milder, as the robust spine—which otherwise contributes a significant portion of the tart flavor—is missing. What remains is the light meat of the flank, soft yet dense, which only falls apart under the fork.

The tomato sauce coats the fish, adding a fruity acidity that lightens the fatty fish. It remains thin enough to be soaked up with bread and tints the fillets from the outside in over the months.

The olive oil blends into the sauce, giving it a slightly green, spicy edge that lingers in the aftertaste. Herbs and a splash of spirit vinegar keep everything fresh, ensuring it tastes of the Mediterranean rather than the pantry.

For children, for salads, for quick meals

Those who shy away from bones or are serving canned fish to children for the first time should reach for this recipe, as nothing is left behind on the edge of the plate. The fillets remain whole and can be lifted onto bread in one piece.

Served over a salad of lettuce, white beans, and red onions, it becomes a lunch for which the kitchen can remain cold. On toasted bread with a little lemon and coarse pepper, one tin serves two people.

The fillets also work well in a quiche or over warm pasta because they keep their shape instead of falling apart into a mush. The version with lemon instead of tomato can be found right next door in the boneless sardines with lemon.

Why deboning remains manual labor

A sardine is a small fish, and its lateral bones are fine and densely packed. No machine can remove them cleanly without tearing the soft flesh. Therefore, in Quiberon, someone takes each fish into their hands individually.

The spine and lateral bones are removed, the two halves are laid out, and the fillets are placed back into the tin before the sauce and oil are added. This step is time-consuming and explains why deboned sardines cost significantly more than those with bones.

In return, you get something from the tin that looks and eats like it was freshly filleted, and no one at the table needs to remove anything from their mouth while eating.

A pantry staple that leaves no one out

Unopened, the tin lasts for years; once opened, the remainder can be stored in a jar with the sauce and enjoyed on bread the next day. It is the tin you reach for when someone is at the table who struggles with bones. More sardines can be found nearby, and you can discover the rest of the la belle-iloise range in the selection from Quiberon.
